The Lambrusco di Modena Cantina della Volta DDR Degorgiatura Dosaggio Recente, obtained from Lambrusco di Sorbara grapes in purity, is a unique wine because it performs 7 years of aging on the lees. This long refinement makes the Lambrusco di Sorbara express intense aromas and scents of cherry, red fruits and blackberry, accompanied by the classic long-aging scent of bread crust. The Lambrusco di Modena Metodo Classico Cantina della Volta DDR is obtained from a careful selection of the individual bunches in the vineyard. It is indeed from the manual harvest that the real process of wine production begins, and particularly in the Metodo Classico this phase is very important for obtaining quality wines. On the hills of Bomporto, Cantina della Volta aims to achieve excellence in the vinification in the Metodo Classico, thanks to the favorable soil and climate conditions of this area, which favor a perfect ripening of the grapes, necessary for the production of light wines for the Champenoise production. DDR Cantina della Volta is produced with soft pressing in a strict fractioning system: the batches of grapes are pressed separately and then assembled to obtain the highest quality. The must selected for the vinification is then clarified by gravity and then fermented in steel vats at a controlled temperature. Six months of refinement in the vats precede bottling with prise de mousse. Secondary fermentation takes place in the bottle, according to the traditional method. A good 84 months, 7 years, it rests on yeasts before carrying out remuage, disgorging, dosing and packaging. The product is sold almost immediately, and it is for this reason that the wording DDR (Dosaggio e Degorgiamento Recente) is shown on the label. In this way the wine expresses all the fragrance and freshness of its aromas. DDR is a unique wine, with a ruby red color, with a compact and purple froth, rich in aromas and flavors, ideal for dishes with good structure such as pasta with meat sauce, cheeses and cold cuts.
